The AIVALI winery started in 1997. In the privately owned vineyards of a total area of 35 acres, the varieties Agiorgitiko, Syrah, Cabernet Sauvignon and Merlot are cultivated. The sole aim of the vineyard is to produce high quality products. For this reason, in addition to significant investments, low returns are also chosen. The estate is inspired by the philosophy of non-intensive agriculture with almost zero fertilization so that the root system searches deep into the soil for food and moisture. The vinification is done without any industrial overtones. The wines are not stabilized or filtered thus keeping their authenticity and their unique character acquired from the terroir where they grow.
